The main reason was, as Adam pointed out, the cover up the coaldust on the hull.
When ships switched to oil as fuel, you didn't need the black hull anymore.
This was very handy on ships that now became cruiseships, you could now give it a colour that would keep it cool inside!
Ships like the new Queen Mary 2 get a black hull for the 'old' look that it gives a ship.
