I suggest you check out Robert Hahn's excellent CAD plans - they can be ordered in custom sizes so they can be matched to your future custom scale model.
However, I do not think a model that separates in two and still remains afloat would be feasible. Just think about the lines, ratlines, aerials for the wireless, etc., not to mention the problem of adequate sealing.
So I'm afraid only one of your son's wishes can be satisfied (but if you add interior lighting, or if you make an RC controlled giant (provided that you have a fair-sized lake in the vicinity where you can launch the model, and the proper means to move it), your son won't be disappointed surely.
