How much detail do you want? Read, how much money do you have? The deck plans from H&W show the arrangment of the deck houses and rooms but not the surface machinery.
The rigging plan in 1/144 scale (7 feet long) is a bargan at $15 as it shows vast exterior detail. The big 1/48 scale plans (20 feet long) are $150 each. I recommend the C-deck plan. Extreme detail? The corners of the cargo hatches are not square; they're rounded on a 12" radius. The mast is 4 indiameter at the base. The walls of the deck house under the forecastle also have rounded corners on 12" radius.
I've budgeted $1000 for more of these plans when I get to H&W in July. You probably want the plating plans if you're going to scratchbuild something large. The deck plating plans show every floor joist, support beam, and each strip of deck. Inquire if there's a planking plan. That will be more useful to you.
