What about making do with the excellent Titanic model and making it into an Olymic by ordering a few extra sets of lifeboats from American Minicraft? (although at $3.00 per part, it may be cheaper to buy a whole 'nother kit) to make up the extra lifeboats needed. Also, there is the issue of the enclosed promenade. That would require some custom work and if you bought that second kit it would be easy to scratchbuild. You would need to remember to grind off the top of the Boat Deck solid guardrail (where it goes higher for the lack of lifeboats amidships on the Titanic). There is also the issue of the tiny decals saying OLYMPIC. I'm clueless on that one. Then remember the lower row on the aft end of (I believe it would be "B" Deck, tow decks below the rear sets of boats) has a longer row of big windows for Olympic then Titanic, that finish off with those pretty quarter circle windows (like the individual ones up in the front by the port and starboard red and green lights.GOOD LUCK!

P.S. The TITANIC HISTORICAL SOCIETY has some OLYMPIC back issues from the late 70's that they have reprinted that have unbelievable photos of the OLYMPIC'S deck, forward funnel areas, et cetera that were covered in two separate issues (OLYMPIC parts 1 and 2). You can get an order form from their webpage.
